The Life Journey Step Three, Living Food, Keto Diet.
It has long been said, We are what we eat! Yes, we have all heard this expression before. But most just never quite believe it to be true because that hamburger, fries and soda eaten yesterday for lunch didn′t cause us to get sick. In fact, that meal tasted so good and filled us up just perfectly.
This Statement is just as True as it is Hard to Understand.
We Are What We Eat! The nutritional content of what we eat determines the composition of our cell membranes, bone marrow, blood, hormones and more.
Consider that each day in an average person′s body, about 300 billion cells die and must be replaced. Where does the body get the raw material to create these billions of new cells if not from the food we consume. In order for our bodies to manufacture healthy cells, we need to consume the right nutrients and that is why we need living food, food that has the right building material for cell creation.
Too, in the effort to acquire nutrition, there is need to distance oneself from the low path of nutrition deprived, poor quality foods and drink consumed by those walking upon the valley plains in this world. Yes, the need is to climb upward onto the summit path to acquire the living food that nourishes the body, mind and soul.

We All Want to Eat Healthy Food
When it comes to eating food, most of us want to think that we are making a choice of food that lead to a healthy life style. Daily, our ears are bombarded with a barrage of rhetoric from commercials in effect stating Choose Our Food, We are the Healthy Choice. I have not watched an hour of television without hearing the never ending calls for the consumer to buy these products being advertised.
Too, this unfettered commercialism has encroached on every walk of life. This leads us to thing that all so called healthy foods are really just a means to increase the coffers of the agriculture, commercial, and industrial industries.
And what has been the result of this excessive commercial greed.
One of The Most Overweight Nations on Earth
The efforts of commercialism are overcoming every efforts that all of us do to achieve a healthy and vibrant life. This is true despite the fact that this country leads the way in investing money to help people loose weight by building juice bars, gyms, heath clubs and health-foods grocery marts, now on nearly every corner.
Even so, the people of this country have become more obese than ever, the opposite of what they desire, which is to be healthy and physically fit.
In fact, this country is now one of the most overweight nation on the earth.
What Choices Do We Have?
So, when we examine what choices we actually do have for eating healthy, it would seem to boil down to two. In fact the food industry would want you to keep eating what they provide, the highly processed foods sold at the grocery markets or the same processed foods prepared in the restaurant industry.
And don′t they all claim to provide the healthy choice.
The alternative would be to find out for ourselves what Living food is and begin choosing this healthy alternative.

The Life Journey Step Three, Food to Avoid
The Lesson Learned
During the first two months of 1978, with the start of the hike on the Appalachian Trail fast approaching, I was busy with the final gear preparations. I had surmised that I could make the chore of cooking easier by boiling water and then pouring the water into instant noodles, instant oatmeal, instant potatoes, instant soups, instant rice and other such foods that became readily available during this decade.
This type of food was in my backpack when in late February, I headed east towards Georgia to begin this 2000 mile Appalachian Trail. Upon starting this adventure, the food supply that I expected would last for ten to fourteen days was gone before the end of the first week and I was constantly hungry that entire week, even after eating double portions.
At first, methought something was wrong with the individual food packets I was carrying because I had been eating the same food regularly during previous years without any apparent complications. However, I also suspected that these steps I had chosen to take, those of climbing mountains, especially at first during freezing temperatures were nothing like any of the steps previous in my life.
The Search for Something Better
Needless to say, that above initial strategy was quickly dropped for a diet with substantially more nutrition. Also, I learned an important lesson about certain foods which was That no matter how much praise is given the food by their manufacturers, their praise dose not make the food good for you.
Too, this is applicable to almost all foods today touted as Good For You. Sadly, what most North Americans eat on a daily basis is no where close to the food that is truly healthy for us to eat.
Yes, the Appalachian Trail became a testing ground for me to determine not only which foods to avoid, but which foods could sustain myself day in and day out, while packing a heavy burden upon my back, while climbing up and down the mountain each and every day, while often doing this in sub freezing temperatures, while walking the path for six months and for more than two thousand miles.

The Life Journey Step Three, Benefits of Living Food
Increasing Food Quality Equals Better Health
The abundant vital life force nutrients obtained from living foods are essential for the overall well being of the human body. These nutrients including amino acids, live enzymes, minerals, oxygen, and vitamins, are all reduced and some eliminated entirely by the heating or processing of living food.
We also obtain from our food: carbohydrates, fats, fiber, proteins and water, all of which are necessary for good health and longevity.
Raw foods have the most of these vital life force nutrients and raw is the best way to eat Living Foods. Often, though, I steam vegetable and boil grains, feeling it is necessary, especially for my mental well being to consume a hot meal. In fact, for nearly half a century, brown rice was my primary source of nutrition that, in order to be eaten, requires boiling which in turn reduces the nutrient content.
Current Research
However, current research has discovered antinutrients, also called nutrition blockers, in grains, legumes, nuts and seeds, (all being a type of seed) and which seeds block nutrition from being absorbed by the body.
One antinutrient that recently has been heard in conversation are called lectins. These are now termed as both an antinutrients and toxins because they can penetrate cells lining the digestive tract and cause a loss of gut epithelial cells, damage the membranes of the epithelium lining, interfere with nutrient digestion and absorption, stimulate shifts in the bacterial flora, and trigger autoimmune reactions.
For most, eating raw food is a major change from the normal routine of eating cooked, processed and restaurant foods. However, success can be achieved by including a few uncooked meals each week. Doing thusly will bring immediate positive changes in one′s health; from having more energy to overall well being.
However, sprouting these foods removes the blockers and thus releases their nutrition by changing the seed into a vegetable.
Human life requires a tightly controlled pH level in the blood of about 7.4, which is slightly alkaline (with a range of 7.35 to 7.45) to survive, and an acidic environment in other areas of the body makes you more vulnerable to disease.

Food pH Value, The Alkaline Diet
The best Living Foods are those with a naturally high pH, including: root vegetables (beets, carrots, horseradish, radishes, rutabaga, and turnips); cruciferous family of vegetables (broccoli, Brussels sprouts, cabbage and cauliflower); leafy greens (collard greens, kale, mustard greens, turnip greens, spinach and Swiss chard); garlic; cayenne peppers (capsicum); and possibly lemons.
Of course, when it comes to pH, the ultimate goal is balance. Eating too many alkalizing foods can, over time, lead to its own fair share of complications, but the risk of this is highly unlikely, given the current sorry state of today′s highly acidic and addictive consumerist diet.

The Life Journey Step Three, Spiritual Food
In the Bible, both the Hebrew language and Greek language have words that translate to food and the definitions of these words have several meanings including expressions as thing eaten, nourishment, bread, meat, and flesh.
However, in some instances, there were some of the people of God who talked in a metaphorical way of Food.
The was true also of Moses, who had told the Israelites, that man doth not live by bread only, but by every word that proceedeth out of the mouth of the LORD. (Deuteronomy 8:3) These very words were also quoted by Jesus. (Matthew 4:4 )
Too, when Jesus was on the earth, it is recorded in the Bible that he said to his disciples, I have meat to eat that ye know not of and My food is to do the will of him who sent me and to finish his work. (John 4:32, 34) Thus, with these two expressions, he let it know that he delighted to do the will of his Father.
Jesus encouraged his followers to search for this spiritual food, the food that would remain for everlasting life. (John 6: 26 , 27)

There is More
When Paul wrote to the Hebrew Christians, he told them that for as long as they had been follows of Christ, they should by now be teachers of God′s Word, but they were in fact still needing the basic principles explained to them like babes needing milk and not being well versed in the Bible as if one would eat solid food, such as meat. (Hebrews 5: 12 , 13 , 14)
Yes, we look forward to that time when Jehovah will provide unto all people a feast of fat things, a feast of wines on the lees, of fat thing full of marrow, of wines on the lees well refined. (Isaiah 25: 6)
